4 lunchbox recipes to bite the back-to-school blues

You’ve already put your kids through the dreaded school shoe run.

Not to mention the endless uniform fittings, and stationery shops – the back-to-school blues have well and truly hit!

But don’t worry! We are here to help!

These delicious (and healthy) lunchbox recipes are the perfect way to get the kids excited for school.

Plus, these recipes are all synonymous with kid-friendly cooking (there’s no actual cooking involved!).

Get them to help make their own lunches so they really have something to look forward to.

APRICOT MUESLI BALLS

  • 2 cups toasted muesli
  • 1 cup dried apricots
  • ¼ cup honey
  • 60g butter, melted
  • ¾ cup shredded coconut

Directions

Kids: Place the muesli, apricots, honey and warm, melted butter in a food processor.

Grown-ups: Process for 2 to 3 minutes or until well combined.

Kids: Place the coconut in a shallow dish. Roll muesli mixture into tablespoon-sized balls. Coat the balls in coconut. Set aside to cool for 15 minutes before serving.

FRUIT SKEWERS

  • ½ watermelon, peeled, cut into 1cm-thick slices
  • ½ honeydew melon, seeded, peeled, cut into 1cm-thick slices
  • ½ rockmelon, seeded, peeled, cut into 1cm-thick slices
  • Bamboo skewers
  • Cookie cutters

Directions

Grown-ups: Cut up each melon in to 1cm-thick slices.

Kids: Use 3cm and 4cm-diameter pastry cutters to cut shapes (stars, hearts – whatever shape you like!) from the fruit.

Kids: Thread the shapes on to the skewers, using one of each type of melon on each skewer.

*Note: if your kids don’t like melon, try using berries, bananas, apples or any type of fruit. It’s the perfect way to get them excited about fruit!

HUMMUS WITH VEGGIE SOLDIERS

  • 1 x 400g tinned chickpeas, drained and washed
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 2 tbsp coriander, chopped
  • ½ tsp ground cumin
  • 1 clove of garlic, crushed
  • 1/3 cup warm water
  • 1 pinch of salt, to taste

Directions

Kids: Place the chickpeas into a food processor, add the olive oil, lemon juice, tahini, coriander, cumin, garlic, water, and salt.

Grown-ups: Blend until smooth. Add more salt if needed.

Grown-ups: Chop up carrots, celery, capsicum, cucumber or cheese to serve!

CHICKEN AND SALAD WRAPS

Serves 2

  • 2 wholegrain wraps
  • ½ avocado, mashed
  • 1 tsp lemon juice
  • ½ large carrot, peeled, grated
  • 30g lettuce
  • 100g shaved chicken breast (can also use ham, beef, whatever you have!)

Directions

Kids: Place avocado and lemon juice in a bowl. Add salt and pepper to taste.

Kids: Place one wrap on a flat surface. Spread with ¼ avocado mixture. Top with half of the chicken, carrot and lettuce. Roll up wrap to enclose filling (grown-ups may need to help with this). Repeat with the remaining ingredients.

Grown-ups: Cut into three pieces.

Note: add more veggies if you like. If your kids like beetroot, cucumber or any other veg, throw it on! Adding a small handful of grated cheese is also a great way to add a little something extra.

These lunchbox recipes are not only the perfect way to get the kids excited for school, but they will also keep them fuelled all day long.
